No-bake Coconut Almond Chocolate Bars Recipe
Prep time: 10 minutes
Chill time: 6 minutes
2 cups old-fashioned rolled oats
1/4 cup flax seed
1/4 cup chia seeds
1/2 cup chopped almonds
1/2 cup flaked coconut
1/4 tsp salt
3/4 cup almond butter
1/2 cup honey
1/4 cup chocolate chips
1. Mix the oats, flax seed, chia seed, almonds, coconut and salt in a mixing bowl.
2. Heat nut butter and honey in microwave or in small saucepan until heated and liquid. Pour this on top of oat mixture. Stir to incorporate all ingredients.
3. Press into a pan and freeze until it holds its shape, about five minutes.
4. Meanwhile, melt chocolate in microwave, saucepan, or double boiler. Drizzle or pipe on top of chilled mixture, then freeze again until chocolate is set, about a minute.
5. Slice into bars.
