This is a really fun recipe, and looks fancy without being much work! I topped with caramel and whipped cream, but ice cream would also be excellent.
Hollowing the apples out is a lot like carving a pumpkin: cut the top off with a sharp knife, and then scoop out as much of the insides as you can with a spoon. Be careful not to break through the skin though, or your apples will leak!
Chop up some more apple, and add it to the bits you scraped out of the other apples (try to avoid any pieces of core or stem). Add sugar and spices, and stuff the mix into the two hollowed apples.
The topping is a standard crisp topping with flour, oats, sugar, and butter. I like to use my fingers to make it so it’s nice and crumbly, and then pack it on top of the apples.
Then bake until nice and soft and bubbly!
Apple Crisp Apples Recipe
Prep time: 15 minutes
Bake time: 30 minutes
2 tablespoons sugar
1 teaspoon flour
1/8 teaspoon cinnamon
pinch of nutmeg
2 tablespoons flour
2 tablespoons rolled oats
1 tablespoon brown sugar
1/4 teaspoon cinnamon
pinch of salt
1 tablespoon butter
1. Preheat oven to 350 degrees.
2. For the apples: Cut the tops off two of the apples, and hollow out the insides with a spoon. Remove and core or stem pieces from the insides and chop. Peel, core, and chop the other apple. Mix the chopped apple pieces, sugar, flour, cinnamon, and nutmeg. Stuff the mixture into the cored apples.
2. For the topping: Combine flour, oats, brown sugar, cinnamon, and salt until well blended. Add the butter, and crumble with your fingers until only small pieces of butter remain. Pack topping on top of the stuffed apples.
3. Place apples on a parchment lined sheet pan and bake about 30 minutes, or until apples are soft and filling is bubbly. Top with whipped cream, caramel, and/or ice cream as desired.
