The perfect recipe for garlic lovers everywhere, and really easy to make. Even easier if you use pre-peeled garlic. The slow roasted garlic cloves are delicious straight, but also do great slathered on crusty bread or mashed with potatoes.
40 Cloves and a Chicken Recipe
Prep time: 15 minutes
Bake time: 1 1/2 hours
1 whole chicken (broiler/fryer) cut into 8 pieces
1/2 cup plus 2 tablespoons olive oil
10 sprigs fresh thyme
40 peeled cloves garlic
Salt and pepper
1. Preheat oven to 350 degrees F.
2. Season chicken with salt and pepper. Toss with 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Brown in batches if necessary, and remove to an 11×13 baking dish.
3. Add remaining 1/2 cup oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours.
4. Remove chicken from the oven, let rest for 5 to 10 minutes, carve, and serve.
