You can use whatever type of cooked rice or grain you have on hand for this easy, flavorful dish.
Kimchi Fried Rice
Time: 15 minutes
Makes: 4 servings
1 tbs olive oil
3 cloves garlic, minced
1 cup kimchi
1 bunch swiss chard, cleaned and cut into 1 inch strips
4 cups rice (I used short grain brown rice, but you can use whatever you have leftover)
2 tbs soy sauce
1 tsp rice vinegar
1/2 tsp sesame oil
Fried eggs, chopped scallions, sambal oelek, and/or fried shallots to top
1. Heat a large skillet on high heat and add the olive oil. Then add garlic, and stir fry until it starts to smell fragrant. Add the kimchi and stir fry another minute.
2. Add swiss chard and rice, and cover. Let cook about 3 minutes until the swiss chard is wilted and the rice is warmed through. Add the soy sauce, rice vinegar, and sesame oil and mix well.
3. Stir fry another 1-2 minutes until everything is absorbed. Serve topped with a fried egg, scallions, sambal oelek, and fried shallots as desired.
